    “Jidori” is a Japanese term and the simplest translation means “chicken of the earth.” It was a term first used around 15 years ago to market this chicken to the many talented Japanese chefs heading the kitchens of some of the finest restaurants in Los Angeles. These chefs began the “Asian-fusion” cooking movement that demanded the freshest quality ingredients much like their sushi traditions. From there Jidori Chicken TM quietly spread to include all chefs from a variety of backgrounds and training.

handled in a stress free environment free from added hormones and antibiotics. Through the extensive research and feeding

techniques developed by the University of Hawai’i at Manoa’s Mealani Research Facility in Waimea, Hawai’i Island Grass-fed

cattle have:

• less total fat

• higher proportions of Omega-3 fatty acids

• higher amounts of Conjugated Linoleic Acid (CLA)

• higher amounts of Vitamin E

• and higher amounts of Carotene’s (Beta and Vitamins)

This is achieved through the ranchers understanding of intensive grazing on

“finishing pastures”, bringing the cattle to market within 24-30 months.
